Seared Scallops with Tre Stelle®
Feta Mango Salsa

The sear of the scallop is what it’s all about making it a perfect appetizer with this punch feta mango salsa!

Ingredients
Instructions
  • 1 ripe mango, sliced and finely diced
  • 1/2 red onion, finely diced
  • 1 jalapeño pepper, minced
  • 1/2 cup | 125 mL Tre Stelle® Crumbled Feta Cheese
  • 1 tbsp | 15 mL freshly grated lime zest
  • 1 tbsp | 15 mL freshly squeezed lime juice
  • 1 tbsp | 15 mL olive oil
  • 4 fresh basil leaves, finely julienned
  • salt and black pepper to taste
  • canola oil
  • 8 fresh sea scallops
  • salt and black pepper
Instructions

Mango Salsa:

  1. Combine all of the salsa ingredients together in a medium bowl.
  2. Cover and refrigerate until ready to use.
  3. For maximum flavour allow salsa to come to room temperature prior to serving.

Scallops:

  1. Rinse scallops under cold water, drain and dry well with paper towels.
  2. In a large non-stick skillet add enough canola oil to cover the bottom of the pan.
  3. Heat until moderately hot over medium-high heat.
  4. Season scallops with salt and pepper; add to pan.
  5. Cook without touching for 1 minute.
  6. Carefully turn and cook for an additional 2 minutes.
  7. Remove scallops from skillet and place on a serving dish; top with Mango Salsa and serve.
