Ricotta Parfaits with Quick
Almond Brittle

A kid-friendly dessert made adult with the touch of almond brittle – a healthy alternative to an ice cream parfait.

ALMOND BRITTLE

  • 1 cup | 250mL granulated sugar
  • 1/2 cup | 125mL water
  • 3/4 cup | 175mL sliced almonds
  • 1 tub | 475g Tre Stelle® Extra Smooth Ricotta Cheese, drained
  • 3 medium ripe bananas, peeled and cut into 1/4” cubes
  • 1/2 cup | 125mL granulated sugar
  • 1 tsp | 5mL vanilla
  • 1/2 tsp | 2mL nutmeg
  • 2 cups | 500mL ripe, fresh or frozen strawberries, sliced
  • Whipped cream and additional strawberries for garnish (optional)
  • 4 parfait glasses
Instructions
  1. For the brittle: Line a baking sheet with aluminum foil and spray lightly with cooking spray.
  2. Add sliced almonds and spread evenly onto the sheet; set aside.
  3. In a medium heavy, non-aluminum saucepan add sugar and water and cook over medium-high heat.
  4. Bring to boil without stirring for about 10 minutes or until the candy thermometer reaches 310°F.
  5. Carefully pour mixture onto almonds and quickly smooth out with a metal spatula.
  6. Allow to cool and break into bite sized pieces.
  7. In a food processor or blender, purée Ricotta, 2 bananas, 1/4 cup sugar, vanilla and nutmeg until smooth.
  8. Stir in remaining banana, cover and refrigerate until ready to use.
  9. Rinse food processor bowl or blender and combine strawberries with remaining 1/4 cup sugar.
  10. Puree until smooth; cover and refrigerate until ready to use.
  11. Starting with strawberry mixture on the bottom, add Ricotta/banana mixture equally into all four parfait glasses.
  12. Top with whipped cream and strawberry slices if desired.
