Tre Stelle® Mascarpone
Pasta a la Vodka

The sauce for this pasta is enriched with vodka and Mascarpone and can be made while the pasta is cooking!

Ingredients
Instructions
  • ½ cup | 60 mL olive oil
  • 2 large sweet onions (like Vidalia)
  • 3 cloves garlic, minced
  • 1 can | 793 g Italian diced tomatoes
  • 1/3 cup | 80 mL vodka
  • 1 tsp | 5 mL dried oregano
  • Pinch red pepper flakes
  • ½ cup | 125 mL Tre Stelle® Mascarpone
  • ¼ cup | 60 mL Italian parsley
  • ½ cup | 125 mL Tre Stelle® Parmigiano Reggiano Cheese shavings
  • 1 lb | 454 g penne pasta
Instructions
  • In a large skillet over medium high heat, add olive oil, onions and garlic.
  • Sauté until the onions become translucent (approximately 5-7 minutes).
  • Add the tomatoes, stir and bring to a low boil.
  • Stir in the vodka, add dried oregano and red pepper flakes.
  • Simmer gently while you prepare the pasta.
  • Bring a large saucepan of salted water to a boil; add pasta and cook until al dente.
  • Drain and place back into the saucepan.
  • Gently stir in the Mascarpone into the pasta sauce and pour into the saucepan with the drained pasta.
  • Stir and pour into a serving platter or individual plates, top with parsley and Parmigiano Reggiano Cheese shavings.
